Vanilla Paleo Cupcakes Recipe (Gluten-free and Dairy-free)
Ingredients:
- ½ cup Coconut Flour
- 4 Eggs
- 1/2 cup Raw Honey
- 1/3 cup Coconut Oil (measure when melted)
- 2 tablespoons Milk (regular milk or coconut milk or water would work too)
- 1 teaspoon Vanilla Extract (optional)
- ½ teaspoon Baking Powder
- ½ teaspoon Baking Soda
- ½ teaspoon Apple Cider Vinegar
- ¼ teaspoon Sea Salt
Instructions:
- 1. Combine all ingredients in a large bowl and stir well until thoroughly mixed.
- 2. Use a spoon to scoop batter into muffin cups. I use these non-toxic baking cups for my cupcakes.
- 3. Bake at 350 degrees for 15 to 20 minutes or until golden brown.
