Sloppy Joe Cornbread Casserole
Sloppy Joe Cornbread Casserole recipe made with cornbread, ground beef, ketchup, brown sugar, garlic powder, and shredded cheese.

Ingredients
- 15 oz pkg cornbread mix
- 2 eggs beaten
- 1 1/3 cups milk
- 2 lbs lean ground beef
- 1 cup ketchup
- 2 tbsp brown sugar
- 2 tsp yellow mustard
- 1 tsp garlic powder
- 15 oz can corn drained
- 1 1/2 cups shredded cheddar cheese
Instructions
- In a mixing bowl, whisk the dry cornbread mix, eggs, and milk until smooth.
- Spray a 9 x 13 baking dish with non stick spray.
- Spread cornbread batter evenly into dish.
- Bake at 350 for 20 minutes (cornbread will not be completely baked).
- Meanwhile, brown and drain the ground beef in a skillet.
- Mix in ketchup, brown sugar, mustard, and garlic powder.
- Keep sloppy joe mixture on low heat until cornbread finishing the first baking time.
- Remove partially baked cornbread from oven.
- Top evenly with drained corn.
- Spread sloppy joe mixture evenly over corn.
- Sprinkle shredded cheese over top of casserole.
- Return to oven and bake an additional 15 minutes until the cheese is melted and the cornbread is done.
- Remove from oven and allow casserole to rest 5 minutes before serving.
