Ingredients
  • 2 lbs boneless lamb leg or shoulder, cut into 1-inch cubes
  • 4 tablespoons olive oil
  • 3 cloves garlic, minced

  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes
For serving
  • Pita bread
  • Tzatziki sauce
  • Sliced tomatoes
  • Sliced red onion
  • Chopped fresh parsley

Instructions
  1. In a large bowl, combine olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper.
  2. Add lamb cubes and toss to coat thoroughly. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat grill to medium-high heat.
  4. Thread marinated lamb onto soaked wooden skewers, leaving small spaces between pieces.
  5. Grill for 8-10 minutes, turning occasionally, until the lamb is cooked to your liking (medium-rare to medium is best for tenderness).
  6. Let the skewers rest for 5 minutes before serving.
  7. Serve with warm pita bread, tzatziki sauce, tomatoes, red onion, and a sprinkle of fresh parsley.
