Ingredients

  • 1 pound asparagus, tough ends trimmed

  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 4 pieces of heavy-duty aluminum foil (about 12×18 inches each)
Instructions
  1. Preheat oven to 400°F (or heat grill to medium-high).
  2. In a small bowl, combine melted butter, minced garlic, lemon juice, Italian seasoning, and red pepper flakes.
  3. Divide asparagus spears into 4 equal portions and arrange in the center of each foil piece.
  4. Top asparagus with shrimp, dividing equally among the foil packs.
  5. Drizzle the garlic lemon butter sauce over each portion.
  6. Season with salt and pepper.
  7. Fold the foil over the shrimp and asparagus to close, crimping the edges to create a sealed packet.
  8. Place foil packets on a baking sheet and bake for 10-12 minutes until shrimp is pink and opaque and asparagus is tender.
  9. Carefully open packets (watch for hot steam!) and sprinkle with fresh parsley and additional lemon slices if desired.

  • For extra flavor, add a splash of white wine to the garlic butter sauce.
